Chicken Pot Pie (minis!)

With my handy dandy Baby Cakes Mini Cupcake Maker, I have made some awesome strawberry rhubarb pies - check them out here - and countless cupcakes and muffins.  The husband asked me why I couldn't make chicken pot pies in them, so they would be easier for him to take to work in his lunch pail.  Well, Hubby, I don't know why I couldn't, I just didn't.  Guess who ended up making chicken pot pies in their cupcake maker?




I don't have a picture of the finished product, just the process :)

Step one: Boil your chicken.  I usually use breasts and shred the chicken, drain and set aside.
Step two: Combine chicken, 2 can mixed veggies, 2 cans cream of celery soup and 1 cup shredded cheddar.
Step three: Roll out pie crust, cut into circles using the pie cutter that came with your cupcake maker, place one in bottom, fill it and top with them with the top crust.  Cook 10 minutes, or until crust is brown.

These are husband and kid approved!

Tomato Soup

I'm the first to admit, I am not a big fan of tomato soup - well, not of Campbell's tomato soup.  However, my Mom made this recipe a few years ago, and I LOVED it!  Needless to say, if there are enough tomatoes left after spaghetti sauce and pizza sauce, soup will be made.  Check out this blog - Chiot's Run - and their amazing tomato soup recipe!
